Method
Prepare the pineapple by slicing off the crown and the base so it can stand firmly on a cutting board. Use a sharp chef’s knife to carve away the skin from top to bottom, following the curve of the fruit, then remove any remaining 'eyes' with a small paring knife.
Quarter the pineapple lengthwise and slice away the woody core from each section. Cut the remaining fruit into half-inch thick spears or bite-sized triangles and arrange them on a chilled serving platter.
In a small glass jar or bowl, whisk together the fresh lime juice and the raw honey until the honey has completely dissolved into a glossy syrup. If the honey is too thick, you can warm it very slightly beforehand.
Drizzle the honey-lime mixture evenly over the arranged pineapple pieces.
Use a microplane to zest the lime directly over the fruit, ensuring the fragrant citrus oils land on the pineapple. Scatter hand-torn mint leaves and a tiny pinch of sea salt over the top to finish.
For the best flavor, allow the fruit to sit for 5 to 10 minutes before serving to let the juices mingle. For a vegan variation, simply substitute the honey with an equal amount of pure maple syrup or agave nectar.
